Busy Day Coffee Cake
4 servings

1 1/4 cups biscuit/baking mix
3 tablespoons sugar
2 tablespoons beaten egg
3 tablespoons 2% milk
for topping
1/4 cup brown sugar
1-1/2 teaspoons flour
1/4 teaspoon ground cinnamon
4 1/2 teaspoons cold butter

Combine baking mix and sugar. Whisk egg and milk; stir into dry ingredients just until moistened. Spread into an 8-in. x 4-in. loaf pan coated with cooking spray. Combine brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. Bake at 400° for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack and enjoy!

I had just enough baking mix left after making the busy day bacon muffins, to make this simple little coffee cake. Mr. H. really liked it, commenting that, "It sure doesn't look like much, but it's very tasty." ;-)

Busy Day Bacon Muffins


Busy Day Bacon Muffins
9 servings

6 bacon strips, diced
2 cups biscuit/baking mix
2 tablespoons sugar
1 egg
2/3 cup milk

Cook bacon according to package directions; drain. Meanwhile, in a large bowl, combine biscuit mix and sugar. In a small bowl, combine egg and milk. Stir into dry ingredients just until moistened. Fold in bacon. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 13-15 minutes or until a toothpick comes out clean. Serve warm with butter and enjoy!

Finding myself out of baking soda, but with baking mix in the pantry and some leftover pepper bacon in the fridge, I decided to try these quick muffins. Easy and yummy! :-)
