Chocolate Muffins
Chocolate Muffins
(from "1 Mix 100 Muffins" cookbook)
1 dozen
1/2 cup unsweetened cocoa
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup brown sugar
1 cup milk chocolate chips
2 eggs
1 cup milk
6 tablespoons oil

1 1/2 cups flour
1/2 cup unsweetened cocoa
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup brown sugar
1 cup milk chocolate chips
2 eggs
1 cup milk
6 tablespoons oil
Preheat oven to 400°. Grease or line 12 muffin cups. Blend flour, cocoa, baking powder, cinnamon, and salt. Stir in sugar and chocolate chips. Lightly beat eggs; add milk and oil. Add wet ingredients to dry ingredients. Stir just until combined. Spoon batter into prepared muffin pan. Bake for 20 minutes. Let cool in pan for 5 minutes, serve warm or transfer to rack to cool completely.
