Blueberry Muffins with Streusel Topping
18 muffins
3 cups flour
1 ½ cups sugar
1 teaspoon salt
1 tablespoon plus 1 teaspoon baking powder
2/3 cup oil
2 eggs
2/3 cup milk
2 cups fresh blueberries
½ cup sugar
1/3 cup flour
¼ cup butter, softened
Combine 3 cups flour, 1 ½ cups sugar, salt and baking powder. Combine oil, eggs and milk. Mix with flour mixture, just until combined. Gently fold in blueberries. Fill muffin cups right to the top. Mix together sugar, flour, and butter with fork; sprinkle over muffins. Bake for 20 to 25 minutes at 400°. Enjoy!

ReplyDeleteHi, I love your blog. I made these today. I made up a pan of mini muffins and had enough leftover to fill a 1/2 dozen pan. They are so good, I ended up eating 4 or 5 of the minis!!! Thank you!
