Crispy Fried Chicken


Crispy Fried Chicken
4 servings

3/4 cup flour
1/4 cup cornmeal
1/8 cup cornstarch
1 1/2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon rubbed sage
1/2 teaspoon pepper
1 egg
1/4 cup water
boneless, skinless chicken breasts (1 to 2 pounds)
2 tablespoons oil

In a bowl combine the flour, cornmeal, cornstarch, salt, paprika, oregano, sage and pepper. In a shallow bowl, beat eggs and water. Dip chicken in egg mixture and then coat with flour mixture. In a skillet, heat oil over medium high heat. Fry chicken for a minute or two on each side or until golden and crispy. Place in an ungreased baking pan. Bake, uncovered, at 350° for 20-25 minutes or until chicken is tender and done. Enjoy!

    We raise and process our own chicken. We take all the skin off the chicken do you think our chicken would work with your recipe? I have never made fried chicken :) I'd like to try your recipe but wasn't sure I could do it with no skin on the chicken.

    I visited your blog yesterday and just loved what I saw! You are a neat lady! I love the house, all your animals and lifestyle. :-)
    For our supper last night, I used skinless chicken breasts with this recipe. I love it because it is healthier, but you still get that fried chicken taste. I am sure your chicken will work just fine. If you use bone in chicken pieces instead of breasts, it'll just need to bake longer. This recipe is actually adapted from a taste of home recipe for a boiler/fryer chicken, but it doesn't specify if the skin is removed - I assume it isn't.

  4. I love how you can use skinless chicken and how you can finish the chicken in the oven. Deep frying always makes me nervous. LOL Your dinner table looks beautiful!
