Crispy Fried Chicken

3/4 cup flour
1/4 cup cornmeal
1/8 cup cornstarch
1 1/2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon rubbed sage
1/2 teaspoon pepper
1 egg
1/4 cup water
boneless, skinless chicken breasts (1 to 2 pounds)
2 tablespoons oil
1/4 cup cornmeal
1/8 cup cornstarch
1 1/2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon rubbed sage
1/2 teaspoon pepper
1 egg
1/4 cup water
boneless, skinless chicken breasts (1 to 2 pounds)
2 tablespoons oil
In a bowl combine the flour, cornmeal, cornstarch, salt, paprika, oregano, sage and pepper. In a shallow bowl, beat eggs and water. Dip chicken in egg mixture and then coat with flour mixture. In a skillet, heat oil over medium high heat. Fry chicken for a minute or two on each side or until golden and crispy. Place in an ungreased baking pan. Bake, uncovered, at 350° for 20-25 minutes or until chicken is tender and done. Enjoy!
