Breakfast in a Muffin


Breakfast in a Muffin
1 dozen

2 cups flour
1/4 cup sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
1/4 cup vegetable oil
2 eggs, divided
1 package (8 ounces) cream cheese, softened
1/4 cup shredded cheddar cheese
1/4 teaspoon seasoned salt
4 bacon strips, cooked and crumbled

In a large bowl, combine first four ingredients. Combine milk, oil and 1 egg; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups half full. In a mixing bowl, beat cream cheese and remaining egg. Add cheddar cheese and seasoned salt; mix well. Stir in bacon. Spoon 2 tablespoons in the center of each muffin. Bake at 425° for 15-20 minutes or until a toothpick comes out clean. Serve warm and enjoy!

    By the way, I was wondering how you like your new pan set Mr.H got for you? Ive been looking into getting a new set, and wondered how these were working out for you. Do things stick much? Thank you for sharing.

  2. Hi Lynn,
    I am loving the cookware! I especially like the deep dish skillet that was part of the set. I also like how all the larger pots have a second small handle opposite the long handle. That makes them much easier to handle. He didn't get the non-stick variety. He had heard better things about this new "tri-ply" kind. I have never used a non-stick skillet so I can't really compare them to that. I haven't had anything stick too much though - they are very easy to clean.
    I hope you enjoy the muffins.

  3. These remind me of the yummy egg souffles you can get at Panera's...which I absolutely love! These are definitely on our menu soon...

    By the way, I really like your new profile picture....looks like warmer days ahead - yeah!

    Thank you for answering my question! Ive always had non stick but want to get a way from these, as now I hear how unhealthy they are.I will look into "tri-ply".

    They look great! I actually tried them, they didn't look grea as yours, but they are yummy! my kids thought i am a genius!
