We went a little Hawaiian at supper tonight...





I used a fresh mango in the rice, instead of the dried that the recipe called for.  
The rice was also tossed with
 coconut oil, macadamia nuts, pineapple juice, cilantro, salt and pepper. 
And it was delicious! 


We had some more grilled pineapple, too.
Because it's just so good and easy. :-)

  1. I'm making this rice, for sure! And pineapple on the grill is one of my favorite treats. Tastes just like summer.
