1 1/4 cups biscuit/baking mix
3 tablespoons sugar
2 tablespoons beaten egg
3 tablespoons 2% milk
for topping
1/4 cup brown sugar
1-1/2 teaspoons flour
1/4 teaspoon ground cinnamon
4 1/2 teaspoons cold butter
Combine baking mix and sugar. Whisk egg and milk; stir into dry ingredients just until moistened. Spread into an 8-in. x 4-in. loaf pan coated with cooking spray. Combine brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. Bake at 400° for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack and enjoy!

I'm the gingerbread man!
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup butter, softened
3/4 cup firmly packed brown sugar
1/2 cup molasses
1 egg
Mix flour, ginger, cinnamon, baking soda, nutmeg and salt. Beat butter and brown sugar with electric mixer on medium speed until light and fluffy. Add molasses and egg; beat well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight.

Keepin' Warm
We've been having some real winter weather around here! Twenty four hours straight of below freezing temps. If I'm not serving a soup or stew when it's cold out, it's usually Italian on the menu. It just seems like such a warming, cozy choice for supper when the wind's a blowin'. :-)

Cheese Filled Coffee Cake
1/2 cup sugar
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
1 cup (8 ounces) sour cream
1/2 cup butter, cubed
1/2 cup water
2 eggs
for filling
2 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
1 egg
1 teaspoon almond extract
1/8 teaspoon salt
for glaze
2 cups confectioners' sugar
3 tablespoons milk
1/2 teaspoon vanilla extract
Combine 1-1/2 cups flour, sugar, yeast and salt. In a small saucepan, heat the sour cream, butter and water to 120°-130°; add to dry ingredients. Beat on medium speed for 2 minutes. Add eggs and 1/2 cup flour; beat 2 minutes longer. Stir in enough remaining flour to form a firm dough. Do not knead. Cover and refrigerate for 2 hours.
