Country Cornbread Muffins


Country Cornbread Muffins
12 servings

1 cup flour
1 cup cornmeal
1/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 cup sour cream
1/4 cup canola oil
1/4 cup milk


Combine the flour, cornmeal, sugar, baking soda and salt. Whisk together the egg, sour cream, oil and milk. Stir into the dry ingredients just until combined. Spoon into greased muffin tin. Bake at 375° for 20-25 minutes or until top is lightly browned and a toothpick inserted near the center comes out clean. Serve warm with butter and enjoy!

My prayers are with you as this storm continues.

My husband checked our rain gauge this evening and we had 5" since yesterday morning. We were under a tornado warning later this afternoon. Several touched down within four miles of us. It is still raining here, but the storm warnings have been lifted.

These look delicious! I love cornbread but have yet to find a recipe I really love, can't wait to try this one.
