Christmas Candy - Buckeyes


Buckeyes5 dozen
1/2 cup butter, softened
1 1/2 cups creamy peanut butter
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar
6 ounces semi-sweet chocolate chips
2 tablespoons shortening

Line a baking sheet with waxed paper; set aside. In a medium bowl, mix butter, peanut butter, vanilla, and confectioners' sugar to form a smooth stiff dough. Shape into balls using 2 teaspoons of dough for each ball. Place on prepared pan, and refrigerate. Melt shortening and chocolate together in microwave. Stir occasionally until smooth. Remove balls from refrigerator. Insert a wooden toothpick into a ball, and dip into melted chocolate. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate for 30 minutes to set. Enjoy!

These have always been one of my favorites - you can buy them at Cracker Barrel - but I've never tried to make them. They look so yummy!

My hubby grew up close to Cincy so he had to educate me to what these were.

We do ours a little bit different but same concept. We put rice krisipies in them to give them a little more texture like a reese's peanut butter cup. Yummy! But, no so good to the waistband.

A friend at church gave me some of these as a gift along with the recipe! Must give the recipe a try since they probably wont make me more!(Do you suppose that is why they gave me the recipe?! :~} ) They are sooo good! I think with all the Christmas goodies, you will have to host another Walkin' on Sunshine. Maybe this time it will be Walkin' in Snowshoes!
