Creamy Pasta Primavera


Creamy Pasta Primavera
6 servings

2 cups uncooked spiral pasta
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
3 medium carrots, cut into strips
1 garlic clove, minced
2 teaspoons canola oil
2 cups cherry tomatoes, halved
1/2 cup fresh grated parmesan cheese
1/2 cup heavy whipping cream*
1/4 teaspoon pepper

Cook pasta according to package directions. In a large skillet, saute asparagus, carrots, and garlic in oil until crisp-tender. Add tomatoes; cook 1 minute longer. Stir in the cheese, cream and pepper. Drain pasta; toss with asparagus mixture and enjoy!

*half and half, or milk

Southwest Chicken Corn Salad


Southwest Chicken Corn Salad
6 servings

4 cups cubed rotisserie chicken
2 cups frozen corn, thawed
1 cup chopped roasted sweet red peppers
1 cup chopped red or sweet onion
1 cup minced fresh cilantro
for dressing
3 tablespoons lime juice
3 tablespoons olive oil
4 teaspoons honey
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon coarsely ground pepper

In a large bowl, combine the chicken,

corn,

red pepper,

onion,

and cilantro.

In a small bowl,
whisk together the dressing ingredients.


Pour over chicken mixture and toss to coat.

Refrigerate until serving.
Serve over a bed of lettuce greens and enjoy!

Nutrition Facts: 1 cup chicken salad equals 332 calories, 14 g fat, 20 g carbohydrate, 2 g fiber, 30 g protein.

Oh yum! I loved this! A super easy, low cal, low fat supper. Great for nights you need to make supper ahead of time as well. I served bean burritos to the rest of the family to go with their salad. They would have looked at me like I had lost my mind if I only served them salad for supper. ;-)

Edited to add - The second time I made this, I only used 1 tablespoon of oil. And in place of the chicken, I used a can of black beans. Still yummy! Currently, one of my very favorite healthy treats. :-)

Farm Fresh Eggs in Evening Sunlight

Giggles brought these by to me this afternoon.
She is so thoughtful.
She and her family could really use
some special prayers right now.
They are going through a very hard time
after loosing a loved one.
I know she would appreciate it and so would I.

Crock Pot Mexican Chicken

Crock Pot Mexican Chicken
8 servings

1 tablespoon oil
1 green bell pepper, chopped
1 onion, chopped
1 garlic clove, minced
1 pound cooked chicken, shredded
1/8 teaspoon cumin
1/4 teaspoon pepper
1 teaspoon chili powder
1 can (7 ounces) salsa verde
1 can (10 ounces) rotel tomatoes
1 can (15 ounces) mexican style charro beans, drained
1 can (15 ounces) black beans, drained and rinsed
1 can (11 ounces) mexicorn
juice of 1 lime
flour tortillas
picante sauce
shredded mexican blend cheese
sour cream

Saute green pepper, onion, and garlic in oil until tender.

Place sauteed vegetables in crock pot.
Add cooked chicken to sauce pan and brown slightly.

Add cumin, pepper, and chili powder to chicken.
Place chicken in crock pot.

Add salsa verde, tomatoes, beans, and corn.
Squeeze lime juice over all.

Warm in crock pot on low heat for about an hour or until ready to serve.
Set out picante sauce, cheese and sour cream for topping.

Serve up with a slotted spoon onto fresh flour tortillas and enjoy!

I couldn't find a recipe for what a wanted to make tonight, so I made it up! I wanted a mexican style filling that I could prepare ahead and keep warm in the crockpot. On busy nights when my family comes home at all different times it will be ready when they are!

It is on the spicy side...yum!

Banana Oat Muffins


Banana Oat Muffins
12 servings
(from Taste of Home's Light and Tasty magazine)

3/4 cup flour
3/4 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
2 egg whites
1 cup mashed ripe bananas (about 2 medium)
1/2 cup brown sugar
1/4 cup fat-free milk
1/4 cup canola oil
1/2 cup chopped pecans

In a large bowl, combine the first six ingredients. In a small bowl, beat the egg whites, bananas, brown sugar, milk and oil*. Stir into dry ingredients just until moistened. Stir in pecans. Line muffin cups with paper liners; fill two-thirds full with batter. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Enjoy!

Nutrition Facts: 1 muffin equals 180 calories, 9 g fat (1 g saturated fat), trace cholesterol, 102 mg sodium, 24 g carbohydrate, 2 g fiber, 3 g protein. (*When made with oil.)

The prettiest flowers of all...

are picked by sweet little hands,

and brought to their Bible class teacher. :-)
Farmhouse Country Ham and Potato Skillet
4 servings

4 potatoes, peeled and chopped
1 medium onion, chopped
2 tablespoons oil
salt and pepper, to taste
4 boneless fully cooked ham steaks (5 ounces each)

In a large skillet, cook potato and onion in oil over medium heat until potato is browned and tender. Add salt and pepper to taste. In another skillet, cook ham steaks over medium heat until browned and heated through. Serve with potato mixture and enjoy!
