Busy Day Coffee Cake
4 servings

1 1/4 cups biscuit/baking mix
3 tablespoons sugar
2 tablespoons beaten egg
3 tablespoons 2% milk
for topping
1/4 cup brown sugar
1-1/2 teaspoons flour
1/4 teaspoon ground cinnamon
4 1/2 teaspoons cold butter

Combine baking mix and sugar. Whisk egg and milk; stir into dry ingredients just until moistened. Spread into an 8-in. x 4-in. loaf pan coated with cooking spray. Combine brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. Bake at 400° for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack and enjoy!

I had just enough baking mix left after making the busy day bacon muffins, to make this simple little coffee cake. Mr. H. really liked it, commenting that, "It sure doesn't look like much, but it's very tasty." ;-)

Mmm coffee cake! We just ate your Italian Chicken, Marinara and Angel Hair pasta recipe! I did mostacholi anf left out the olives though. My husband thought it was really good. I'll be making your chicken pot pie for dinner tomarrow.. I'm on a roll! ;o)
