White Chili


White Chili
8 servings

1 tablespoon oil
1/2 onion, chopped
1/2 jalapeno, diced
1 garlic clove, diced
2 cups chicken broth
1/4 teaspoon cumin
1/4 teaspoon oregano
1/4 teaspoon pepper
1/2 teaspoon salt
3 cans great northern beans, drained and rinsed
1 4 ounce can chopped green chilies
2 cups cooked chicken, chopped or shredded
1 cup half and half
1/2 cup sour cream
4 ounces pepper jack cheese

Saute onion, jalapeno and garlic in oil until tender. Add broth and seasonings. Stir in beans, chilies, cooked chicken, half and half and sour cream. Heat through. Add cheese and stir until melted. Serve up steaming bowls and enjoy!

I've only ever had White Chili ONCE in my life--and I instantly fell in love! This one sounds very similar to the one I ate {it was at a potluck, and I never found out who made it}. Can't wait to try it!
