1 pound lean ground beef
1 tablespoon oil
1 small onion, chopped
1 green bell pepper, chopped
1 can (15 ounces) Ranch Style beans, drained
1 can (10 ounces) rotel tomatoes mild, drained
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1/4 teaspoon garlic powder
2 cups (8 ounces) shredded colby jack cheese
8 flour tortillas

Cook beef over medium heat until done; drain. Meanwhile saute onion and bell pepper in oil until tender. Add onion and pepper to beef. Stir in beans, tomatoes, chili powder, salt, cumin, pepper and garlic powder. In a slow cooker place two tortillas side by side, overlapping if necessary. Layer with a forth of the beef mixture and a fourth of the cheese. Repeat layers three more times. Pour enchilada sauce over all. Cover and cook on low for 2 to 2-1/2 hours or until heated through.

Another meal for busy nights when we all are needing to eat supper at different times. I love that no one has to "heat up" their supper - it's ready when they are ! :-) Mr. H. loved it! And the leftovers the next day?? SO good!

Made these last night and I have to say I was skeptical when I turned on the crockpot. I was mistaken! They were so good and the tortillas really softened up. My husband said it was a winner! Served with SC and avocado. Even better the 2nd day!

Ranch Style Beans can be found in the canned bean section in any grocery store.

i made this a few weeks ago per the recipe and it was a huge hit! loved it. last night i made it again but used green enchilada sauce and again, it was yum. :)

I just tried this and it was AMAZING!!!! It was easy and quick to make, and made a ton of food. I know we'll be making it again soon. (I couldn't find Ranch beans either so I used Chili beans.)

I couldn't find ranch style beans, so I used pinto. I also added two cloves of garlic when I was cooking the onion and omitted the garlic powder.
Sadly, very little left over!

***** (5-stars) I modified this delicious recipe using red, green and yellow peppers, black beans, green enchilada sauce, cheddar cheese, and corn tortillas. I used 4 torts per layer. I also seasoned the ground beef with the cummin, garlic, chili powder as I browned the beef as I wanted to cook those flavors into the meat.
My family loved it, it's a keeper. It's one of the easiest meals to prepare. It's also easy to plan as all the ingredients are staples in our kitchen.

I JUST ate a bowl of these crock pot enchiladas that I made for the first time, and I rushed to my computer to comment after cleaning my plate. This is such a great recipe! VERY easy and a little variation on things certainly does not make or break it. I used black beans, whole wheat tortillas, and two mini red and yellow bell peppers because that is what I had on hand. I also used an entire 19 oz can of enchilada sauce rather than 15 ounces by mistake, but it came out WONDERFUL anyway despite all of the variations. Thanks for a great recipe!
This was SO yummy!! We used corn tortillas, re-fried black beans, ground turkey and added 1/2 jar fire roasted green chilies. We also topped it with a dollop of plain Greek yogurt. Definitely a keeper! :) Thank you!

Could you explain what you mean by placing the enchiladas side by side in the crockpot? Silly I know, but I'm thinking that they would be on top of one another?
I am not understanding the side by side instructions as well. Just place one against each side of the crockpot?
I have not made this particular recipe but I do make "layered enchiladas" in the oven pretty often. I'm from Texas and Mexican food (Tex-Mex) is cooked in my house practically once a week.
For the people asking about the tortillas, I'm pretty sure you can just lay the tortillas flat on the bottom of the crock pot but try not to over lap them. I have done a method like this in a casserole dish and depending on the shape/size you may have to cut peices to fit so the bottom is all covered.
I've substituted ground turkey in all kinds of recipes and I'm sure it'll be fine. It's much less greasey!
Also, "Ranch Style Beans" is a brand of beans. They are basically pinto beans in a sauce (a very yummy sauce!). They come in a black can and I've never had a problem finding them but maybe in different regions they are not as common? I get the Jalepeno kind and it adds a nice kick!

Made this tonight and it was awesome. We had leftovers and I know they will be great as well. My daughter wants me to try corn tortillas (she doesn't like flour) so may give that a try. Not sure if I should fry first? This will be a go to recipe for me.

Made this for supper last night for the first time. I added fresh cilantro on top with a little sour cream. While eating, my husband said,"Make this again." Easy and taste so good! Thanks, I'll be making it again!
I have this in the crock pot right now. I changed up a few ingredients. I omitted the green pepper and used a can of chopped green chili's instead and used yellow corn tortillas instead of flour tortillas. Plan to add a dallop of plain greek yogurt(our sour cream substitute) upon serving. I also doubled the recipe to feed my large family. I can't wait for it to finish cooking.
