Quick Lunch from the Garden


I'm getting an abundant harvest right now from my cherry tomato plant.
So I decided to use some up at lunch today by scaling down my 
One Pot Pasta recipe into a single lunch portion. 


The original recipe calls for 12 oz. of linguine and 12 oz. of tomatoes.
I took that 1 to 1 ratio and used 1 cup of small pasta and 1 cup of tomatoes.
I scaled down the other ingredients, covered it all with water,
and boiled for ten minutes.


It was tasty!

Spring Garden

Sunshine on my shoulders makes me happy!


Boy, I was humming this old John Denver song pretty much all day Saturday and Sunday!
We had the most beautiful weekend,
and I spent as much time outside as possible.


The animals were also happy to see the sunshine.
It's been cold, rainy and cloudy for weeks on end now
and a warm, sunny weekend was such a treat!


I did some work in the chicken yard.


Johnny Cash, my daughter's stock show pig, is looking good.


The kitties loved laying in the sun all day!



And I spent several hours taking care of this sad mess!
I planted early spring plants last February,
but then after the car accident, I never got to plant anything later in the spring
like I usually do.
For almost a year, my garden beds have been sadly neglected.



That, my friends, is the result of a lot of work!
But, oh the satisfaction. :-)


I weeded four of my six beds before I tuckered out.


I plated one bag of seed potatoes,


three onion sets,


carrots and radises, 


and one whole bed of salad greens. :-)
I'll weed the other two beds soon.
They're reserved for herbs and tomatoes.


I had plenty of company while I worked.


Oh, how I love my Daisy girl. 
Man's best friend indeed. :-)

Mini Zinnias Blooming



Our family received some devastating news week before last.
My mother-in-law was diagnosed with a large brain tumor.
The day that my husband told me the news the first mini zinnia blossomed in my fall cutting garden.
I knew that the first blossoms were meant to be for her.


Right after her surgery I was able to take ten blossoms to her.  


We are waiting for the pathology report to come back.


We know that God is in control.

Our Favorite New Potatoes


Dig up three or four potatoes per person.
Scrub under cool water.
Boil until tender.
Toss with butter.
Sprinkle with salt and freshly ground black pepper.

Red Potatoes from the Garden


We've been digging up potatoes as we need them and boy are they good!


Bring them in, cook them up.
From ground to plate in less than 30 minutes.
It just doesn't get any fresher than that!  Yum!

Early Spring Garden


Our potato plants are looking good and I'm hoping we'll have a good harvest in a few more weeks.


The onion tops are starting to fall over,
so I know they're almost ready.


I think I'll give them until the first of May 
and then I'll harvest and cure them.
I only planted one set this year and really wish I'd planted more.


We've had lots of lettuce!


And the radishes did really well.  
Again, I wish I'd planted more!

We haven't put any of our summer plants in the ground yet, but we'll get around to it.
I'm hoping to be able to garden again in just a few more weeks. :-)
