The Karate Kid II

Pickled Okra pass the test!

~They were officially yummy!~
My daughter wasn't home for supper
and hasn't tried them yet,
but Mr. H., my son, and myself
almost polished off a whole jar at supper last night!
For those living where they aren't able to buy good ol' "Taste of Texas" pickled okra, these are a very good substitute! :-)

Fresh Strawberry Pie

Nothing says summertime quite like strawberries. :-)

This recipe came from the
~summer seasonal favorites~
section of the
Homemade pie crusts are never quite as pretty
as rolling out the store bought,
but they sure do taste better. ;-)

A little sweetened cream cheese,

lots of fresh, ripe strawberries,

fresh strawberry filling,

and a heart shaped berry on top!

Fresh Strawberry Pie
8 servings

1 recipe pie crust
6 cups strawberries
1 cup sugar
3 tablespoons cornstarch
1/2 cup water
1 package (8 ounces) cream cheese, softened*

Prepare and bake a one crust pie shell. Cool. Mash enough berries to measure 1 cup. Stir together sugar and cornstarch. Gradually stir in water and crushed berries. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Stir in a few drops red food coloring; cool. Beat cream cheese* until smooth; spread on bottom of cooled baked pie shell. Fill shell with remaining berries; pour berry mixture over top. Chill at least 3 hours. Enjoy!

*The recipe didn't call for it, but I added 1/4 cup powdered sugar to the cream cheese.

Spicy Pickled Okra

I love, love, love hot and spicy pickled okra,
so I thought I'd give Homesick Texan's
recipe a try.
They have to refrigerate for one day before serving.
I'll reveal the ~taste test~ results tomorrow! :-)

A Favorite Country Breakfast


Farmhouse Biscuits and Sausage Gravy
8 large servings

1 pound bulk pork sausage
1/2 cup butter
1/2 cup flour
salt and pepper to taste (We like lots of pepper!)
3 cups milk
warm biscuits

In a skillet, cook sausage over medium heat until no longer pink; drain. Add butter and heat until melted. Add the flour, salt and pepper; cook and stir until blended and starting to brown. Gradually add the milk, stirring constantly. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over biscuits and enjoy!

KOLACHES! :-)


I have wanted to learn to make kolaches FOREVER!


After reading Homesick Texan talk about kolaches,
I decided that her recipe was definately the one for me to try.
I was not dissapointed!

You prepare the dough and let it rise once.

This is the posypka - it is very important!

You roll out the dough, flatten the kolaches
and let them rise a second time.

I filled the kolaches with all of our favorite flavors ~
apple, peach, apricot, rasperry, poppyseed, and cream cheese.
Yummy!

I used prepared fillings for all but the cream cheese variety.
Easy and very tasty!

Add the posypka!

Bake! :-)
