A Lunchtime Treat


Spicy Thai Peanut Noodles and reading my favorite blogs!

Spicy Thai Peanut Noodles
2 servings

4 ounces thin rice noodles, cooked according to package directions
1/2 cup hot water
1/4 cup creamy peanut butter
1/4 cup soy sauce
2 teaspoons honey
2 teaspoons sesame seeds
2 teaspoons ground ginger
1/4 to 1/2 teaspoon cayenne pepper
1/8 teaspoon garlic powder
2 teaspoons chopped peanuts

Mix peanut butter with water until combined. Stir in soy sauce, honey, sesame seeds and spices. Toss with hot noodles and top with peanuts. Enjoy!

Hi Mrs. H. I bought all of these ingredients, and right before I made it, I realized that 4oz of noodles is not much at all. Was that a typo or is that correct? The package that I bought was 14 oz. Thanks so much!

Hi Jennifer,
No that isn't a typo. The recipe is for two servings. The box of noodles I have is a 16 oz box and it makes 8 servings - 2oz a serving. Hope you enjoy it! It's a favorite lunch of my daughter and I. :-)

Thanks so much Mrs. H! I have been trying your recipes over the past week. Those Cheddar Bay Biscuits are delicious! So are the calzone rolls! We're making them again tonight and inviting friends over. :o) I really appreciate all the time you take to put your recipes on your blog.

When you make this, is there a considerable amount of liquid still left in the bowls after the noodles are all gone? I think there was about a cm or 1/2 in of sauce left in both bowls after we were finished.
