Confetti Eggs


1 tablespoon oil
1 cup chopped assorted bell peppers
1/4 cup chopped onion
1 egg
3 egg whites (or 3 additional eggs)
splash of milk
1 tablespoon parmesan cheese
salt and peper to taste

Saute peppers and onion in oil until tender.
Add egg, egg whites, and milk. 
Scramble.
Top with cheese, salt and pepper.

Enjoy!

(Makes 1 large serving if using egg whites or 2 servings if using 4 whole eggs.)

Yummy Baked Chicken


This maple mustard baked chicken recipe, originally from
is all over pinterest.
Just search for "man pleasing chicken." 


It is aptly named because I liked it,
and my daughter enjoyed it,
but Mr. H. and my son basically licked their plates clean. :-)

Here's what you'll need -

2 large or 4 small boneless, skinless chicken breasts
(original recipe calls for chicken thighs)
1/2 cup dijon mustard
1/4 cup pure maple syrup
1 tablespoon rice vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon corn starch
fresh rosemary

Here's what you do -

Preheat oven to 450.
Line an 8x8 baking dish with two sheets of aluminum foil.
Place chicken on top of foil.
Whisk together mustard, syrup, vinegar, salt and pepper.
Pour over chicken making sure all the chicken is nicely coated.
Bake, uncovered, for 30 minutes.
(If using chicken thighs bake 40 minutes.)
Remove chicken from oven and let sit 5 minutes.
Plate chicken.
 Immediately add corn starch to baking dish and whisk into remaining sauce.
Pour thickened sauce over chicken and sprinkle with rosemary.
Enjoy!

Warming Up!


Oh boy we've had some chilly days and nights for the past few weeks -

Days with temps not out of the 30's.
Weeks with barely a peek at the sun.
Delayed school starts.
Ice, sleet and even snow flurries.

That's some cold business for us folks down here in Texas!


But things started to warm up this week and it is so nice.
Yesterday the temperature rose steadily throughout the day and there wasn't a cloud in the sky.
And today was just gorgeous!  I spent as much time outside as possible.


I checked in on Merle.
He is looking good at 5 weeks out until show.


My daughter's dog Remington turned one year old this week on the 13th.


We had a nice Valentine's day.


I made some chocolate covered strawberries for the family.


Mr. H. got me a single rose and we went to our church's couples Valentine's Day dinner.
The food was absolutely wonderful and the entertainment was even better!
We enjoyed a delightful evening with 21 other couples.  Fun times!



My son and his friends were outside working hard today.


They filled sand bags for a shooting berm. 



Mr. H. and I got some plants in the ground, too.
Sixteen seed potatoes, an onion set, carrots, beets, radishes, and lettuce.


And oh how the animals are loving the sunshine!



Mr. H. took a picture of Taylor Swift and I 
and then I just sat in the grass for a little bit and snapped some shots of all my critters!

Special Delivery

by the back door.


Well, I wanted to update that she still is. :-)  
Nothing like a pet that not only feeds you breakfast,
but also delivers it to your back door!

Wintry Weather


We don't get a lot of truly wintry weather here in south central Texas,
but in the past week we've had two separate ice storms.


I had to watch my step heading out to the car
and I had to use the 4 wheel drive on the way in to work.

We didn't miss any school,
but did get two "late start" days. :-)


I would like to present the following pictures taken during our wintry weather.
I believe they display two chicken "truths" -


#1 Chickens are very hardy animals.


#2 Chickens are not very smart.

This is what happened when Taylor Swift decided to roost "on top" 
of the hen house instead of "inside" the hen house during an ice storm. ;-)

PB & J Muffins



PB and J Muffins
12 servings


1 3/4 cups flour
1/2 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup half and half
1 egg
1 teaspoon vanilla
1/3 cup peanut butter
2 tablespoon butter, softened
grape jelly


Combine flour, sugar, baking powder and salt.  
Stir in milk, half and half, egg, and vanilla.  
Stir in peanut butter and butter.  
Fill each muffin tin 1/2 way with batter.  
Top with 1 teaspoon of jelly.  
Add the rest of the batter to cover jelly.  
Bake at 400° for 20 minutes or until muffins test done.  
Enjoy!

Ducks Day Out


Over the weekend the ducks learned how to fly out of the 8 foot pen they live in.
I headed outside with my camera to see how they would react.


I was a bit worried that the cats might try to get them.


But, exactly the opposite happened...


Donald charged at Chupa and Chiclet and,


the CATS were scared of the DUCKS!


Chupa went and "hid" under the shed. :-)


And Chiclet sat high up on the lawn mower and didn't take his eyes off the ducks.


Donald and Daffy waddled around.


They tried some new foods.


And did some exploring.


And this, THIS, was hysterical.


Mr. H. started quacking like a duck and Donald tilted his head 


one way and then the other, just like our dogs do.  It was SO funny!





The ducks enjoyed themselves for quite awhile.



And then Daisy came out side!


She started chasing them,


and Donald and Daffy ran 


STRAIGHT


back into their pen.


The ducks day out
was over! :-)
