I'm on a mission...


Pink Mexican Sugar Cookies
3 dozen

1 cup shortening
1 cup sugar
1 egg
2 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
several drops red food coloring
extra sugar

Cream shortening and sugar. Add egg and mix well. Combine flour, baking powder, and salt; add to creamed mixture and mix well. Add food coloring; mix well. Shape dough into balls and roll in sugar. Place balls on cookie sheet and flatten with the bottom of a glass. Bake for 12 minutes at 350°. Cool completely and enjoy!


I am trying to recreate one of my husband's favorite childhood treats - pink mexican sugar cookies! He has fond memories of both grandmothers taking him to a neighborhood bakery in the valley of south Texas for these special cookies. He enjoyed these today, but we are thinking the cookie needs to be denser - maybe more flour next time? Stay tuned...I'll update the recipe next time I try a batch!

Edited to add - he has also requested that they be "greasier". :-) Though, I don't think I can, in good conscience, use more than one cup of shortening at a time! ;-)

You should check with that Mexican Bakery in Bryan! I grew up in San Diego with lots of Mexican heritage treats so I'm always recalling some or another exotic thing...Good luck!

At my grandmother's house, I remember processed ham lunchmeat dipped in picante sauce... I am now feeling a little jipped ;)

What interesting little cookies. I love the pink color with the sprinkles. It's fun to recreate favorite dishes from the past. My husband is always trying to get me to make peanut butter pie. His grandmother and mother used to make it for his birthday every year. I will be trying out your recipe if you modify it please let me know. Thanks for sharing it.

I can't wait to try this recipe, I live in a border town with tons of amazing Mexican bakeries, just today I tried one place with these cookies (La Fiesta Bakery, Las Cruces, NM) and I think they could easily be described as dense and greasy, but fantastically delicious. However I was looking for a recipe so I could make some myself at home for a holiday party, I'm going to try these!
