Potato Ham Bake

Potato Ham Bake
12 servings

2 cans cream of chicken soup
4 tablespoons butter, melted
1 cup (8 ounces) sour cream
2 cups shredded sharp cheddar cheese
2 cups cubed fully cooked ham
1 bag (32 ounces) frozen cubed hash browns, thawed
for topping
4 tablespoons butter, melted
3/4 cup breadcrumbs

In a large bowl combine first four ingredients; mix well. Stir in ham and potatoes. Spread in a greased 9x13" baking dish. Combine topping ingredients; sprinkle over casserole. Bake uncovered at 350° degrees for 1 hour or until potatoes are tender.

This was quick, easy and good! It's great for a comforting supper, and it would be equally delicious for a holiday breakfast or brunch.

The recipe came from a friend of mine that has four little boys - so she knows what boys like. ;-) My guys loved it and my big guy (who was out of town over the weekend, and missing his home cooked meals) had three servings! A hit. :-)

Wanted you to know I made this for my husband and I (I cut the recipe in half) and my husband loved it! He said it reminded him of a dish they used to have in elementary school (which is a high complement, because we went to a very, very small elementary school and the cook there was fabulous--and his neighbor).
