Honey and Spice Banana Muffins


Honey and Spice Banana Muffins
(from the back of my Bran Flakes box)
1 dozen

1 cup bran flakes cereal
1/4 cup milk
1/2 cup honey
1/4 cup butter, melted
2/3 cup mashed ripe banana
1 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon baking soda
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg

Heat oven to 375°. Soak cereal in milk for 5 minutes. Meanwhile, combine remaining ingredients, then add cereal mixture. Spoon into greased or paper-lined muffin cups. Bake for 20-25 minutes, or until done. Cool 5 minutes; remove from pan and enjoy!

have really enjoyed all of your recipes and my family has as well. I appreciate you taking the time to put them on your blog. Iw as wondering about this recipe though, it says 1 1/2 tsp baking powder and then later it says 1/4 tsp baking powder. Is that correct?

Oh thank you for catching this Melissa! Luckily I have a box of bran flakes in the pantry and was able to check the recipe just now. 1 1/2 tsp baking powder is correct, but it should be 1/4 tsp baking SODA. So sorry about the mistake and I really appreciate you telling me.
