Texas Chili


Texas Chili
6 servings

1 pound ground beef
1/4 cup chopped onion
1 can (15 ounces) crushed tomatoes
1 can (8 ounces) tomato sauce
1 can (15 ounces) hot chili beans
1 can (15 ounces) pinto beans, rinsed and drained
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon cayenne pepper
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon dried oregano
grated sharp cheddar cheese
sour cream

In a large saucepan, cook the beef and onion over medium heat; drain. Stir in tomatoes, tomato sauce, and beans. Add the seasonings. Bring to a boil. Reduce heat; cover and simmer for 30 minutes to 1 hour. Serve steaming hot with cheese and sour cream. Enjoy!
I also make this in the crock pot often.  Cook beef and onions, place in crock pot and add other ingredients.  Cook about  four hours on low.  I prefer the taste of the chili this way! :-)

This chili is on the spicy side. You can go easier on the spices if you don't like much heat. Also, my daddy will tell you that 'real' chili never saw a tomato or a bean, but this is the way I like it! ;-)

Hey there! I wanted you to know that I didn't like chili much while growing up. I don't care for ground beef...texture I think. Soooo, I've NEVER, I repeat NEVER made chili. I love to cook and I've cooked many a delicacy, but never a simple, big pot of chili. How sad is that? Well, my husband and eldest love chili and the other two didn't know if they did, due to my dislike of ground meat. But, since you recipes are stellar, I gave the Texas Chili a try. I figured my husband would be pretty psyched because it had the word "Texas" in it and he's all Texan down to the cellular level! (Is this a little long? Am I dragging this out?:)WE LOVED IT. "We" meaning ME included. We love spicy hot and so it was right up our alley. I even made a double batch since I trust your cooking so much. Just wanted you to know there are some happy people in TN enjoying a little Texas!

This really sounds good so I made it for supper tonight! It is simmering away right now. :) I usually just make my chili by just throwing stuff in until I get it just right, so, I thought I would give yours a try! It smells wonderful; thanks for a great recipe!
