Jessica Simpson's Chicken and Dumplings

Jessica Simpson's Chicken and Dumplings6 servings

3 tubes croissant rolls
1 small rotisserie chicken, skin discarded and meat removed from bones
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup chicken broth
salt and freshly ground black pepper to taste

Preheat oven to 400ยบ. Roll out the cans of croissant sheets and separate into diamond shaped sections. Place a small handful of rotisserie chicken on each diamond, fold dough over and press ends together to create dumplings. Line a 9x13 inch baking dish with one layer of dumplings. Combine soups and chicken broth; pour over dumplings. Season with salt and pepper and bake until the dumplings are tender and cooked through and the top is brown and bubbly - about 30 minutes. (I laid foil across my pan about halfway though, because the dumplings were browning too quickly.)

Yummy!!! I got this recipe from my friend Giggles. Thank you Giggles - these were so easy and so delicious!

Also, I just had to add, my family came home from soccer practice tonight, and of course wanted to know what was in the oven. I replied, "Jessica Simpson's Chicken and Dumplings". My daughter said, "Oh? She cooks??" ;-) Haha - yes, she does, and she cooks well! :-)

i'm sorry--i just cannot believe that JS cooks. maybe her chef made up this recipe and gave it to her to put in a book to sell to make extra $$. did you ever watch her newlywed show? good grief, that girl is dingy. ;)

btw, i made your chili recipe last night. my husband thinks that chili should be cooked ONLY by him--so i usually don't even try. plus, it's great to get a night out of the kitchen when he volunteers to make it. but last night it was chilly here (66 degrees, brrr), so i pulled up your recipe. i figured you are from texas so you are bound to have spicy chili!

and he LOVED it. i added jalapeno and pablano peppers plus a green & red pepper and fresh garlic, but otherwise the blend of spices is just perfect.

Thank you for your kind welcome to blog world. It is fun! I made this recipe last night for my family and it was a hit! My hubby can be somewhat picky so I was concerned that he wouldn't like it, but he loved it. Apparently Jessica does know her chicken from her tuna ;P

I just watched the rerun of Rachel's Ray show on December 29, 2008 where Jessica makes this recipe. I know Rachel had to allow Jessica to make this recipe her way, but for those of you who are making this recipe or wanting to make this recipe, it would be much easier if you take the last four ingredients, which includes the two soups, broth and peppper, and mix them together in a separate bowl before putting them on top of the dumplings. Then all you have to do is poor the mixture over the dumplings.

I haven't tried this recipe, but it does sound like it would be good. I probably would add some spices to make it even better. Maybe even mixing something with the chicken like a can of green chilies and sauted onions before wrapping it in the crescent roll dough. You could also take part of the soup mixture and mix it into the chicken mixture before making the 'dumplings.' Just some suggestions to make life a little easier and possibly a little tastier!

Thank you for your suggestions. I followed the original recipe the first time I made this. I also noticed that it would make more sense to combine the soups and broth, and so I posted my recipe that way. :-)
I wanted to add, also, that the additional ingredients you suggested do sound good. But after actually having made the recipe, I need to mention that the little crescent roll triangles really can only handle the bit of chicken that the recipe calls for - and it would be quite messy to add the soup mixture!
I have made this many, many times and my family thoroughly enjoys it. The recipe really is just wonderful and very tasty the way it is! I hope you try it! :-)
