You can't catch me...


I'm the gingerbread man!

Gingerbread Cookies
2 1/2 dozen

3 cups flour
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup butter, softened
3/4 cup firmly packed brown sugar
1/2 cup molasses
1 egg

Mix flour, ginger, cinnamon, baking soda, nutmeg and salt. Beat butter and brown sugar with electric mixer on medium speed until light and fluffy. Add molasses and egg; beat well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight.


Preheat oven to 350°F. Roll out dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread men shapes. Place 1 inch apart on ungreased baking sheets.

Bake 10 minutes or until edges of cookies are set and just begin to brown. Cool on baking sheets 1 to 2 minutes. Remove to wire racks; cool completely.

Decorate cooled cookies as desired.

Store cookies in airtight container up to 5 days.

Simple Saturday Sweetness

Keepin' Warm


We've been having some real winter weather around here! Twenty four hours straight of below freezing temps. If I'm not serving a soup or stew when it's cold out, it's usually Italian on the menu. It just seems like such a warming, cozy choice for supper when the wind's a blowin'. :-)

Cheese Filled Coffee Cake


Cheese Filled Coffee Cake
(from Taste of Home magazine)
4 loaves

4-1/2 cups flour
1/2 cup sugar
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
1 cup (8 ounces) sour cream
1/2 cup butter, cubed
1/2 cup water
2 eggs
for filling
2 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
1 egg
1 teaspoon almond extract
1/8 teaspoon salt
for glaze
2 cups confectioners' sugar
3 tablespoons milk
1/2 teaspoon vanilla extract

Combine 1-1/2 cups flour, sugar, yeast and salt. In a small saucepan, heat the sour cream, butter and water to 120°-130°; add to dry ingredients. Beat on medium speed for 2 minutes. Add eggs and 1/2 cup flour; beat 2 minutes longer. Stir in enough remaining flour to form a firm dough. Do not knead. Cover and refrigerate for 2 hours.


In a small bowl, beat filling ingredients until smooth; set aside. Turn dough onto a lightly floured surface; divide into four pieces. Roll each into a 12-in. x 8-in. rectangle.

Spread filling to within 1/2 in. of edges.

Roll up, jelly-roll style, starting with a long side; pinch seams to seal and tuck ends under. Place, seams side down, on two greased baking sheets. With a sharp knife, make deep slashes across the top of each loaf. Cover and let rise in a warm place until doubled, about 1 hour.

Bake at 375° for 20-25 minutes or until golden brown. Remove from pans to wire racks. Combine glaze ingredients; drizzle over warm loaves. Cool. Refrigerate leftovers and enjoy!

Cheese Savories
(from The Laura Ingalls Wilder Country Cookbook)
about 18 pieces

1/4 pound sharp cheddar cheese, cut in small cubes
1/4 cup butter, cut in small pieces
1/2 cup flour
pinch of salt
paprika

Cream cheese and butter in food processor. Add flour and salt and process until combined. From cheese mixture into 1 inch balls. Place on ungreased cookie sheet and refrigerate several hours. Sprinkle with paprika and bake at 450 for 8 to 10 minutes. Serve hot and enjoy!

I don't have a food processor, so I grated the cheese and butter and blended it with the flour and salt. I did have to add about 1 tablespoon of milk to get the balls to form.

I served these to my family for breakfast with bacon and potatoes o'brien. They gobbled them right up!
